does it?

if not, what else besides Yawgmoth's Agenda (which has a horrible drawback) causes cards to NOT go to the graveyard?

Nope, doesn't work. Planar Void isn't a replacement effect since it doesn't say "instead". The card goes to the graveyard and then Planar Void triggers to remove it from the game.

Doing a search on Crystalkeep, not much of permanent stuff. Enduring Renewal, but that only deals with creatures. Same with Purgatory. That's about it.

i guess i could do an "in responce, stifle the 2nd part of the energy field" type deal.

Yep.

Or you could forgo the field and just combo planar void with web of inertia!

And then you could play another stifle, to counter sacrifice, when the first stifle resolves! :D

I always wanted to combine energy field with cyklopean mummy.
It doesnt seem to work anymore, but necropotence would still do it.
Dreams of the dead might fit too, and some buyback spells. But its not easy to base the deck around anything of this.

Maybe play white to make your stuff (and yourself) untargetable.
Kill with some artifact (cursed scroll doesnt work).

Or use it in stasis with forsaken city. Very cool against beatdown decks.
