You always turn at least one undead, no matter what its HD. If there's more than 1 undead, you still roll the 2d6 to see how many more you affect, but the one automatic is counted in that roll. So if automatically turn zombies (HD 2) and you encounter 2 and roll a 3, you automatically turn 1...

You could use Nevinyrral's Disk... that gets rid of enchantments, plus a creature sweeper... and if your zombies have regeneration, so much the better :)

Dark Rituals should be fairly cheap - a lot were printed before WOTC decided not to go with them anymore.
