I'll give you my semi-casual mono-red SA deck. It's not slow, but probably not fast enough for prime time. The creature base is similar to tournament-style decks, but you may want to work with the mana base. At least it'll be a start.

4x Sneak Attack
4x Seal of Fire
3x Bargaining Table (not good for Extended)

2x Mogg Fanatic
3x Crater Hellion
3x Force of Nature
3x Palinchron (my own secret tech)
2x Penumbra Wurm
3x Phyrexian Colussus
3x Serra Avatar
3x Shivan Phoenix (probably not good for Extended)
2x Viashino Cutthroat (probably not good for Extended)

21x Mountain
4x Fire Diamond

For speed Birds, Elves, and Grim monoliths are a must.

Pandemonium is perfect

I always used weatherseed treefolk in mi sneak deck cuz it's big and comes back

Definitly thorn Elemental, un-blockability!

Draco!!

Devouring Strosus!!

Yea those last 2 are like impossible to hard cast but face it, in extended if you don't get your sneak u are skey-rewed anyways!

I made this Legends-theme sneak attack deck. This version is T1, but it would be easy to remove some power( and maybe put in sword of the chosen and unnatural selection :) ), and make it
T 1,5. Extended is not a possibility, because Karakas is needed.

The Legendary Deck:

4 city of brass
3 taiga
3 tropical island
2 savannah
2 bayou
3 karakas(fantastic with sneak)

4 land grant
1 sol ring
2 fellwar stones
1 grim monolith (avoid vineyard burn)

1 rofellos
1 merieke ri berit (great fun with sneak/karakas)
1 adun oakenshield
4 captain sisay (sneak him to find what you need, and bounce him with karakas)
1 phelddagrif (can trigger defense of the heart)
1 ertai, the corrupted (counterspell with sneak)
1 sliver queen
1 rith the awakener
1 dromar, the banisher
1 reya dawnbringer
1 nicol bolas
1 legacy weapon

4 eladamris vineyard (very strong here)
2 defense of the heart
4 sneak attack
2 pernicious deed

4 vindicate
1 regrowth
1 demonic tutor
1 mind twist
1 balance

the last 10 cards can easyly be replaced. If you play in a creature-heavy environment, 4 defense of the heart is a must. Maybe 4 fellwar stones is a good idea? Or Hannah, to get back lost enchantments (like pernicious deed!) ?
I promise you that this deck is great fun, and it plays well (much better than I expected).
Main problem is, that it contains more than 50 rare cards -took me ages to build...

hmm, didnt see you wanted an extended deck -guess that spoils the fun a bit...

Most of the SA-Decks posted here have one big problem: they absolutly depend on Sneak Attack. Without it, they will loose the game. Against a blue counter deck or any white deck with enchantment removal like Scour these decks are lost. The trick is to build a deck that works really good with Sneak Attack, but also could win without it. That's why I play Cutthroats and Ball Lightnings as well as Tinder Walls. The latter give me mana necessary for the creatures with higher cc. They also allow me to play a Sneak on turn 2. However, if they scour my Sneaks, I play the first Ball Lightning on turn 3, play a cutthroat on turn 4 and something like Ancient Hydra on turn 5. It's much slower than with Sneak Attack, sure, but this deck can still be played. However, there are some more cards that would fit in such a deck: Greater Good or Two-Headed Dragon are two good examples, they are mentioned above.

I agree with Craven, the deck should not be dependent on SA. Here is my casual SA deck:

12 Mountain
12 Forest
1 Draco
4 Rathi Dragon
3 Hull Breach
4 Veteran Explorer
4 Skyshroud Elf
2 Phyrexian Colossus
2 Two-Headed Dragon
4 Serra Avatar
4 Crater Hellion
4 Orcish Lumberjack
4 Sneak Attack

Without SA.

T1: Forest, Veteran Explorer
T2: Land, Attack, If Veteran Explorer dies... get two Mountains, Rathi Dragon. (Who doesn't block the Veteran Explorer?)

With SA:

T1: Mountain, Orcish Lumberjack
T2: Forest, Skyshroud Elf
T3: Land, tap Land, Forest, and Mountain, use Orcish Lumberjack, Sneak Attack. Sneak out two Fatties. Avatar??? Game over???

Hull Breaches are due to the local metagame.

I agree with your point for a casual environment, but if this deck is being built for an extended tournament it won't win without the Sneak Attack. Mr. Gnome put it perfectly:
in extended if you don't get your sneak u are skey-rewed anyways!
.
A competitive deck needs focus before versatility.

It used to be good as a Toolbox (utility) deck and could most definitely survive on its own w/o the Sneak b/c it had Survival of the Fittest.

W/O Survival, Sneak loses all of its utility (for all intents and purposes), so it needs to change into a super-fast beating deck in order to win on a consistent enough basis.

The deck I posted doesn't need Sneak to win, although it is much worse without it. But it has 4 BoP, 4City of Traitor's and 4 Grim Monolith's, That's potentially 8 mana on turn 3, plenty enough for 12 of the fatties in the decklist. More white mana would be better though.

Deck revision
Cut 1 Pandemonium
Add 1 Goblin Bombardment (Rector, Colosssus, Prophet)
